This is the best chocolate chip banana bread. It’s incredibly moist, full of bananas, and loaded with chocolate chips.
When you have lots of ripe bananas and you scared they could go bad, using them in baking a quick bread is a brilliant idea if not making a smoothie or pancakes or muffins. Let’s begin this decade by using what we brought from upcountry, shall we? :-). This chocolate chip banana bread is super quick and easy to make and you are guaranteed of moistness.
WHAT YOU WILL NEED.
Let’s delve in baking this delicious chocolate chip banana bread. Let’s talk about the ingredients needed:
Bananas: Is there a banana bread without bananas really, huh?! As usual, make sure they are super ripe. Have an extra one to garnish on top.
Chocolate chips: This is another key ingredient in this recipe. They are readily available in any major supermarket around you. In case you miss them out, try substituting them with dark chocolate chunks. Make sure you have extra to garnish on top
All purpose flour: Whenever I am baking cake or quick bread that is not gluten free like this chocolate chip banana bread, this is the flour I would go for.
Baking powder & baking soda: These are our raising agents in this quick bread.
Molasses: Our choice of sweetener since it bring out a stronger flavor in the bread as well as a darker color. However, one can use brown sugar as it has traces of molasses in small quantity though the flavor will vary. Any other sweeter that is not liquid in nature can be substituted in the same quantity e.g castor sugar.
Cinnamon & nutmeg: These two spices are perfect in this bread. Leaving them out would be significant in terms of flavor.
Eggs: They help in tenderizing the bread as well as raising it with the help of the baking soda and the baking powder. They are also the healthiest, most nutrient-dense natural foods on the planet especially if you choose the organic type.
Buttermilk: In case you are wondering why we use this ingredient and not regular milk, let me explain: Buttermilk is first of all much lower in fat than regular milk or cream. And since it’s acidic, when combined with baking soda it helps add a lightness and tenderness to a bake.
Vegetable oil: This helps moisten the bread. You can as well use melted coconut oil or melted butter to moisten the bread.
Vanilla extract: as usual this is the real deal in adding more flavor to the bread.
Salt: to taste. Do not leave this out, pleeeeaassssee or else you definitely wont like your bread.
HOW TO MAKE CHOCOLATE CHIP BANANA BREAD:
First line your loaf pan with parchment paper.
Gather all your ingredients together and in one bowl mix all the dry ingredients together and all the wet ones in another bowl.
Then mix the contents of the two bowl together.
Pour the mixture into your prepared loaf pan ready for baking.. At this point, slice the extra banana in half and place it on top and sprinkle more chocolate chips on top if you have. (Unfortunately I didn’t have extra chocolate chips while making this one)
Bake for about 60- 80 minutes at 180°C until the cake is well baked and a toothpick or skewer inserted inside comes out clean. Cover with an aluminum foil halfway through to avoid over-browning on top.
Allow to cool before slicing and serving.
Chocolate Chip Banana Bread.
Ingredients
- 3 cups (390g) all purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- 1 cup (150g) chocolate chips
- 2 large eggs
- ¾ cup (150g0 molasses or brown sugar
- 1½ cup buttermilk or plain yogurt *
- ½ cup (125ml) vegetable oil or melted unsalted butter
- 1 teaspoon vanilla extract
- 1½ cups mashed bananas, very ripe
- *1 extra banana for garnishing on top.
- *Extra chocolate chips for garnishing on top.
Instructions
- Preheat your oven to 180°C
- Line a 9″ X 5″ loaf/ bread tin with parchment paper and set a side.
- In a bowl, sift the flour, baking powder and baking soda. Add salt, cinnamon and nutmeg and mix till well combined then set aside.
- Add the chocolate chips to the flour mixture.
- In another bowl, combine the eggs, brown sugar/ molasses, plain yogurt/ buttermilk, vegetable oil/ melted butter and vanilla extract, till well combined. Then add in the mashed ripe bananas
- Bring together the dry and wet ingredients and mix till all is incorporated.
- Pour the mixture into your prepared loaf pan ready for baking. Slice the extra banana in half and place it on top and sprinkle more chocolate chips on top if you have.
- Bake for about 60- 80 minutes at 180°C until the cake is well baked and a toothpick inserted inside comes out clean. Cover with an aluminium foil halfway through to avoid over-browning on top.
- Leave to cool completely, slice then serve. Enjoy
