We keep giving you more options that are gluten free each passing day. Today I share with you this delicious Gluten Free Pumpkin bread which requires a few ingredients and voila!
This is how it comes out when you slice it after cooling down.
Ingredients
- 1 cup rice flour
- 1/2 cup tapioca flour
- 1/2 cup potato starch
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons pumpkin pie spice*
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup molasses or brown sugar
- 4 tablespoons coconut oil, melted
- 1/4 cup buttermilk or plain yogurt
- 2 teaspoons vanilla extract
- 1 cup pumpkin puree**
Instructions
- Preheat your oven to 180°C
- Line a 9″ X 5″ loaf/ bread tin with parchment paper and set a side.
- In a bowl, sift the rice flour, tapioca flour, potato starch, baking powder and baking soda. Add in the pumpkin spice and salt then mix till well combined then set aside.
- In another bowl, combine the eggs, molasses/brown sugar, melted coconut oil, buttermilk/plain yogurt and vanilla extract, till well combined. Then add in the pumpkin puree.
- Bring together the dry and wet ingredients and mix till all is well incorporated.
- Pour the mixture into your prepared loaf pan ready for baking.
- Bake at 180°C for about 40- 60 minutes or until the bread is well baked and a toothpick inserted inside comes out clean. Cover with an aluminium foil halfway through to avoid over-browning on top.
- Allow to cool completely before slicing then serve. Enjoy!

** You can make your own pumpkin puree by steaming pumpkins till fork tender or even roast in an oven at 180°C for about 40- 60 minutes till fork tender then mash it up with a fork or use a food processor to make the puree
