Who thought you’d use black beans commonly known as Njahi in Kenya for baking purposes more so in a brownie! Am here to tell you that a delicious chocolaty brownie can be made using these beans. No one will tell that there is njahi in these brownies! They are nutritious since black beans are known to be high in protein, fiber, vitamin B9 , B1, manganese and yet they are readily available. They are also a gluten free hence perfect for those with celiac disease.
Below are all the ingredients you need:
Put all your measured ingredients (except chocolate chips) into a food processor and process for about 2-3 minutes .
(See note below in case you don’t have a food processor)
Once processed, fold in 1/2 cup of the chocolate chips then pour the batter into a greased 8″ by 8″ square pan. Top with the remaining chocolate chips.
Bake in a 180°C preheated oven for about 15-20 minutes.
Let the brownies cool completely before slicing and serving.
Ingredients
- 1 1/2 cup cooked black beans
- 2 tablespoons cocoa powder
- 1/2 cup quick oats
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/2 cup honey
- 1/4 cup coconut oil, melted or vegetable oil
- 2 teaspoons vanilla extract
- 3/4 cup chocolate chips
Instructions
- Preheat your oven to 180 °C
- Grease a 8″ X 8″ square baking pan with coconut oil or vegetable oil
- In a food processor, pour in all your measured ingredients except the chocolate chips and process on high speed for about 2-3 minutes. (See note below in case you don’t have a food processor).
- Fold in half cup of the chocolate chips then pour the batter into your greased pan then garnish with the remaining 1/4 cup of the chocolate chips
- Bake for 15-20 minutes then once ready, let them cool completely for another 15-30 minutes before cutting. Yields 9-12 brownies.
- Serve and enjoy as dessert or snack.
Note:
If you don’t have a food processor but can mash black beans with a wine bottle, please do so. Also make sure to use oat flour.
