Honey Dijon Chicken

March 16, 2020

This chicken recipe is one of the easiest out there! It requires simple yet few ingredients and takes the least amount of time to prep and cook. It is one of our quick fixes for dinner whenever we have chicken on hand. Besides all the ingredients are healthy and the amount of oil used in cooking is very minimal.

Preparation and cooking

Start by gathering all your ingredients together. Chop the onions and prepare the ginger, garlic and turmeric paste as well as dania and/ or chives.

Then season the chicken breasts with salt and pepper

In a large non-stick cooking pot/ sufuria, heat the oil over medium heat. Using a pair of tongs, place the seasoned chicken breasts in the oil.

Let them cook till golden brown on both sides. (Kindly note the time will vary for this step depending on the size of your chicken breasts). Remove to a bowl or plate

On the same cooking pot/sufuria, add in the onions and cook them till soft then add in the minced garlic, ginger and turmeric paste and dania stems and cook till fragrant.

Add in the water and bring to simmer then add in the honey, mustered and thyme.

Return the chicken breasts to the cooking sauce flipping it to get well coated and let cook for 8- 10 minutes

Finish by seasoning with salt and pepper then stirring in the dania leaves and/or chives for garnish.

Serve over brown rice or with brown chapati or mashed potatoes or potato wedges any other accompaniment of your choice
