This is the easiest recipe I have so far on the blog! All it involves is mashing and mixing and voila! Making this “jam” takes less than five minutes. The rest of the time is just for chilling.
Once you know how to make this chia jam, you will be addicted! It is keto friendly, zero sugar, vegan and can be enjoyed without the worry of it being unhealthy. It can be enjoyed in various ways. See the last step on the recipe. It also need minimal ingredients as shown below.
Put the raspberries on a large plate and using a fork, mash them to your desired consistency.
Transfer the mashed raspberries into a big jar.
Add the chia seeds, sweetener of choice and apple cider vinegar or lemon juice. Stir well till everything is combined.
Cover the jar and let the jam chill in the refrigerator for at least 45 minutes before use. ( The chia seeds will absorb the raspberry juices, soften, swell, and thicken the mixture to a jelly-like substance just like a jam).
The jam can be used on toast, oatmeal, granola bowl or parfait, fruit salad, as a dipping sauce etc. The uses are endless. Try it on my Healthy Gluten Free Pancakes as well.

Note:
* My choice of sweetener was monk fruit sweetener since it has zero calories, no carbs, no fat like regular sugar and thus cannot spike your blood sugar. Best suited for diabetic people, anyone watching their calories intake yet want sweet things and it promotes weight lose. Incase you don’t have it on hand, you can used castor sugar instead.
