Skillet Breakfast Potatoes (protein packed)

Making brunch is such a weekend vibe and making some effort goes along way to compensate for that breakfast. I already have other brunch recipes here on the blog including Protein packed breakfast casserole and Sweet Potato Breakfast Hash or Sweet Potato Shakshuka.

Skillet breakfast potatoes is another brunch idea that we enjoy in our household and a great alternative to the Protein packed breakfast casserole incase you don’t have an oven. It is also adaptive in the sense that you can switch the potatoes with sweet potatoes as well as use the spices of your preference. You can even use regular minced meat incase you don’t have sausages on hand. It is protein packed as well and very filling.

Preparation and cooking:

Start by preparing all your ingredients. Peel the potatoes and dice them into small cubes. Cube the bacon, remove the sausage casing and dice the onions into your desired size.

Place the potatoes in a large cooking pot/sufuria. Cover with water and bring to a boil for about 5-7 minutes. (make sure they don’t over cook and become marshy). Once done, drain and set aside.

As the potatoes are boiling, heat a large skillet/pan and cook the bacon pieces till they are crispy and golden or to your desired cooking for about 4-6 minutes. Once done, use a slotted spoon and set them aside.

On the same pan/skillet, add in the sausage meat and allow to cook using the bacon fat. Keep stirring and allow to cook till it starts browning. (You can use a potato masher to breakdown the sausages or even a spatula or wooden spoon). Once done, remove from heat and set aside.

On the same pan, add in the oil/ butter and let it heat up. Add the per-boiled potatoes together with all the spices, black pepper & sea salt. Stir well and allow to cook till they become crispy.

Add in the onions and allow to cook to your desired cooking.

Add back the cooked bacon and sausage meat. Stir everything together.

Remove from heat and serve.

Ingredients
  • 800g potatoes, peeled and diced into small cubes
  • 200g bacon
  • 8 sausages (Approx. 400g) (beef, pork or chicken) gf
  • 1/4 cup cooking oil*
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • Sea salt and black pepper to taste
  • 2 onions, diced

NOTE:

You can use butter instead of cooking oil or a combination of both.

You can use sweet potatoes instead of potatoes.

You can use regular minced meat (beef, chicken, pork or lamb) instead of sausages.

You can use a combination of the spices you prefer.
