Making this flatbread wrap is basically the easiest thing you can do whenever you want a quick breakfast.
Whenever we have leftover chapatis from dinner, we love revamping them to a breakfast Chapati Rolex. Chapati rolex as it’s commonly referred to in Uganda and Kenya is basically a flat bread rolled with some veggies and eggs. Furthermore, it’s a perfect breakfast option best served with a cup of tea or coffee in the morning. It can be served as a complete meal as well. You can actually add more filling including chicken, beef strips or ground meat. Basically you can make it using whatever you have on hand. Just make sure you have the chapati and eggs.
Besides, it’s a quick recipe while takes less than 20 minutes to prepare and cook. All you need ready is the chapati. I have shown different ways on how to make a chapati rolex on Instagram stories, so be sure to follow me there to see what I share.

Preparation & cooking:
Start by preparing all your ingredients. Dice all the capsicums (hohos) and onion and chop the chives or spring onions or the cilantro (dania) leaves if using.
Next, heat up a large non stick pan or cast iron pan or stainless steel pan on medium heat and add in the cooking oil. Once heated through, add in all the diced capsicums (hohos) and the diced onion. Stir and allow to cook for about 3-4 minutes. Add in the spices then season with sea salt & black pepper. Stir well to combine and allow to cook down for a minute. Then remove from heat and set aside to cool as you do the next step.
In a separate bowl, crack in the eggs and whisk them. Remember to season them sea salt & with black pepper.
Add the cooked capsicums (hohos) and onion to the egg mixture. Stir to combine well.
Heat up the same pan on low heat then add half of the eggs and capsicum mixture. Allow to spread evenly.
Gently place one of the chapatis on top. Cook on low heat for about 2 minutes to allow the egg to cook through.
Once the lower side is cooked, flip to heat up the chapati for a minute.
Finally, sprinkle the chives or green onions or cilantro (dania) leaves then fold gentle into a roll (rolex).
Repeat for the same remaining egg mixture and chapati then slice and serve with a cup of tea or coffee or any other accompaniment of your choice.
Simple Chapati Rolex (Flatbread wrap)
Ingredients
- 2 chapatis
- 4 eggs
- 1 red capsicum (hoho), diced
- 1 yellow capsicum (hoho), diced
- 1 green capsicum (hoho), diced
- 1 red onion, diced
- 1 tsp coriander powder
- 1 tsp cumin powder
- Sea salt & black pepper, to taste
- 2 tbsp Cooking oil
- Chives or spring onions or cilantro (dania) leaves, chopped for garnish (optional)
