This Plantain Frittata is protein packed with breakfast sausages and eggs as well as lots of vegetables and thus a great meal to start off the day.

Start by preheating your oven to 200°C and preparing all the vegetables; peel & cut the plantains into your preferred shape & size, deseed & dice the bell peppers and onion and remove the sausage casing.
Heat up some cooking oil in a frying pan then gently drop plantain piece after piece into the hot oil but be careful not to over crowd the pan so the temperature of the oil doesn’t drop. Fry on both sides for 3-4 minutes or until lightly browned. Set aside.
In a skillet, heat up the cooking oil on medium heat then fry the sausage meat till golden brown. Add in the onions and ginger garlic paste. Stir and allow to cook for about a minute or two.
Next add in the green, red and yellow bell peppers together with paprika powder, thyme, curry powder, black pepper and salt to taste. Stir and leave to cook for another 3-5 minutes on medium heat. As the vegetables are cooking, crack your eggs and whisk them. Add in some salt & black pepper to taste.
Also brush your baking dish with some oil. (Preferably a 11 x 7 x 2 inches rectangular baking dish or 9 x 9 x 2 inches square baking dish or 10 x 2 inches round baking dish or any dish whose capacity is between 2.4-2.6 Litres).
Once the veggies and sausages have cooked, transfer to the baking dish and spread evenly then pour in the eggs on top.
Finish by placing the fried plantain on top. Bake in your pre heated oven for 25-30 minutes or until cooked through.
You can test using a toothpick or a skewer. It should come out clean. After baking, let it cool for few minutes before serving.
Slice and serve warm
