Breakfast Potatoes with Choma Sausages

These breakfast potatoes are easy and quick to make. They are loaded with sausages which makes it hearty and filling. The choice of spices also elevate this breakfast recipe to another level.

Preparation & cooking Breakfast Potatoes with Choma Sausages:

Start by preparing all your ingredients. Peel the potatoes and dice them into small cubes then remove the sausage casing and dice the onions into your desired size.

Place the potatoes in a large cooking pot. Cover with water and bring to a boil for about 5-7 minutes. (make sure they don’t over cook and become marshy). Once done, drain and set aside.

As the potatoes are boiling, heat a large skillet/pan and add in a third of the cooking oil. Allow it to heat up then add in the sausage meat. You can use a potato masher to breakdown the sausages or even a spatula or wooden spoon. Keep stirring and allow to cook till it starts browning. Once done, remove from heat and set aside.

On the same pan, add in the remaining cooking oil and let it heat up. Add the per-boiled potatoes together with all the spices, black pepper & sea salt. Stir well and allow to cook till they become crispy.

Add in the onions, stir and allow to cook to your desired liking. Add back the cooked sausage meat. Stir everything together. Garnish with some chives or cilantro or parsley. Remove from heat and serve hot.

Ingredients

  • 5 “choma” sausages Approx. 400g (beef, pork or chicken)
  • 1/4 cup cooking oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • Sea salt and black pepper to taste
  • 2 onions diced
  • 1 bunch chives/ cilantro/ parsley chopped for garnish

Notes

“Choma” sausage is a type of sausage commonly found in Kenya. It is more flavourful and longer than the regular sausages. In case one cannot access this type of sausage, they can use 8 regular sausages instead.
