Start by peeling and dicing your carrots, dicing the onion and washing the rice till clean.
In a large cooking pot, add the cooking, onions and carrots then cook under medium till caramelization for maximum flavor. Takes about 7-8 minutes.
Once caramelized, add in the cilantro the garlic, ginger (if using), & turmeric (if using) and allow to cook till fragrant for about 30 seconds.
Next up, add the washed rice to the cooking pot and season with sea salt and black pepper. Stir and cook for a minute. Then add water or stock. Stir to combine. Bring to medium high heat and to a boil.
Once the water boils, lower to medium low heat, cover pot (make sure it is fairly tight), and cook for 15-17 minutes.
Once rice is al dente, add in the green peas and sweet corn (if using), fluff to mix then cover to allow the rice to fully cook and hear up the vegetables.
Once cooked, let it rest while covered for about 10 minutes then serve and enjoy.
