and it’s high time I shared the easiest yet most delicious baked chicken thigh recipe. It is not just a healthy chicken recipe, it is juicy and quick to prepare. You can have this chicken with either some ugali & creamed managu or even some crispy baked potatoes & steamed veggies. It definitely requires minimal ingredients as below:
Start by preheating your oven to 220°C and remove your chicken from the fridge for it to come to room temperature. You can do this on a try.
In a small bowl, add all your spices & herbs together with salt & black pepper. Mix well till everything is well combined. Once at room temperature, pat it dry with a kitchen towel them massage in the cooking oil then rub in 3/4 of the spice & herb mixture generously on all sides. Use the 1/4 to coat under the skin and on top.
Place the thighs on a baking rack and remember to put a tray underneath covered with foil for any droplets of oil to fall on and avoid messing your oven.
Bake the thighs for 35-40 minutes till well cooked inside.
Allow to rest for about 5 minutes before serving. Garnish with chives or cilantro or parsley.
Serve with a carb or any side of your choice. Goes well with either some ugali & creamed managu or even some crispy baked potatoes & steamed veggies.
Juicy Baked Chicken Thighs
Ingredients
- 6 chicken thighs
- 1 ¾ tbsp cooking oil
- 1 ¾ tsp garlic powder
- 1 ¾ tsp onion powder
- 1 ¼ tsp paprika
- ¾ tsp dried oregano
- ¾ tsp dried thyme
- ¾ tsp sea salt
- ¼ tsp black pepper
- A bunch of chives/ cilantro/ parsley for garnish, (optional)
