This is the best juicy baked chicken legs recipe you’ll need for any weeknight dinner or when entertaining and don’t have so many helping hands around! This chicken legs recipe is bursting with flavour and it’s unbelievably juicy! Plus, it’s super easy to make – plus, you can have some Crispy Baked Potatoes and veggies roasting as the chicken is baking!
The dried herbs used brings out the best chicken flavour.
Preparation & cooking:
Start by preheating your oven to 200°C and remove your chicken from the fridge for it to come to room temperature. You can do this on a tray.
In a small bowl, add all your spices & herbs together with salt & black pepper. Mix well till everything is well combined.
Once at room temperature, pat it dry with a paper towel them massage in the cooking oil then rub in ¾ of the spice & herb mixture generously on all sides. Use the ¼ to coat under the skin and on top.
Marination Step: For more intense flavour, cover with a cling film and put in the refrigerator for 2-3 hours or even overnight!
Place the legs on a baking rack and remember to put a tray underneath covered with foil for any droplets of oil to fall on and avoid messing your oven. Bake the chicken legs for 40-45 minutes till well cooked inside.
Switch your oven to broil and broil for about 3-5 minutes to achieve the slightly charred skin.
Allow to rest for about 5 minutes before serving. Garnish with chives or cilantro or parsley.
Serve with any side of your choice. Goes really well with either some Crispy Baked Potatoes & garlic creamed spinach or even some crispy baked sweet potato cubes & steamed veggies.
