This easy vegetable rice is incredibly flavorful with great textures and is a perfect side for any meal whether meat based or otherwise.
WHAT YOU WILL NEED:
Let’s talk about the ingredients needed to make this easy and delicious vegetable rice:
- Rice: I prefer to use basmati rice in this recipe since it’s fragrant and has a light and fluffy texture. Other than basmati rice, you can as well use pishori or long grain or brown rice though the cooking time will have to be adjusted.
- Cooking oil: Always go for what you regularly use or what you prefer be it vegetable oil, olive oil, coconut oil or even ghee.
- Onion & carrots: This two work magic to this dish. The flavor profile is top notch especially when they are cooked together (at the same time).
- Garlic: I use fresh garlic for the best flavor.
- Ginger: Though this is optional, if using I prefer fresh to the powder.
- Turmeric: Besides the benefits that comes with it, it also adds a great color. It’s optional as well.
- Sea salt & black pepper: Perfect combo to flavor any dish. Use according to your palette. Remember to always use black pepper especially while using turmeric to allow your body fully absorb the nutrients from the turmeric.
- Water / stock: Incase you don’t have any stock on hand (whether vegetable or beef or chicken), water works just fine. I use slightly less than than the recommended ratio of 1:2.
- Green peas: Whether you had preboiled them or bought frozen, either is ok.
- Sweet corn: Is optional though they add a great sweet element to the dish. Whether you had preboiled them or bought frozen, either is ok.
PREPARATION AND COOKING:
- Start by peeling and dicing your carrots, dicing the onion and washing the rice till clean.
- In a large cooking pot, add the cooking, onions and carrots then cook under medium till caramelization for maximum flavor. Takes about 7-8 minutes.
- Once caramelized, add in the cilantro the garlic, ginger (if using), & turmeric (if using) and allow to cook till fragrant for about 30 seconds.
- Next up, add the washed rice to the cooking pot and season with sea salt and black pepper. Stir and cook for a minute. Then add water or stock. Stir to combine. Bring to medium high heat and to a boil.
- Once the water boils, lower to medium low heat, cover pot (make sure it is fairly tight), and cook for 15-17 minutes.
- Once rice is al dente, add in the green peas and sweet corn (if using), fluff to mix then cover to allow the rice to fully cook and hear up the vegetables.
- Once cooked, let it rest while covered for about 10 minutes then serve and enjoy.

- 2 cups rice
- 1 tbsp cooking oil
- 1 onion
- 1 cup diced carrots
- 2-3 cloves garlic, minced
- 1 tsp minced ginger, (optional)
- 1 tsp minced turmeric, (optional)
- Sea salt & black pepper to taste
- 3 ¾ cups water / stock
- 1 cup pre cooked / frozen peas
- 1 cup pre cooked / frozen sweet corn, (optional)
