This Easy One Pot Cashew Cream Veggies Pasta dish will have everyone come for a second serving. It truly decadent and quick to whip up as it requires minimal prepping of the ingredients.
While shooting this recipe, I unfortunately didn’t have enough bacon. Feel free to use as much as on the recipe card or skip all together if you want a vegan dish.
PREPARATION & COOKING:
Start by dicing the bacon then fry it on a large cooking pot till golden and crispy on medium heat. Once done, remove & set aside.
Add the cooking oil to the same pot followed by the diced onions and sauté for about a minute till they are translucent and soft.
Next add in the raw cashews and allow then to fry for about 3-4 minutes then add in the water or stock. Cover and allow to cook till it simmers.
As the cashews are cooking, cook your pasta as per the package instruction less two minutes then drain and set aside. Also, you can steam your French beans and carrots at the same time.
Once the cashews have simmered, add them to the blender together with the liquid and blend till creamy.
Add back the cashew cream to the cooking pot on medium heat. Season with salt and pepper then allow it to simmer then add the drained pasta, steamed veggies, cooked bacon.
Stir everything together and voila! Your meal is ready to be devoured.
Garnish with cilantro or parsley or dill and enjoy.
