You got few ingredients to incorporate and have them ready. As always the flipping test is bubbles and golden edges as shown below:
And perfectly well cooked pancakes are as golden brown as below:
Ingredients
- 1 very ripe bananas
- 2 eggs
- 1 1/4 cup milk*
- 2 tablespoons coconut oil, melted **
- 1 teaspoon vanilla extract
- 1 1/2 tablespoon honey***
- 1 cup rice flour****
- 2 teaspoons baking powder
- 1/4 teaspoon sea salt
- 1/2 teaspoon cinnamon powder (optional)
- Oil for frying**

Instructions
- Peel the ripe banana and mash it with a fork until smooth then whisk in the eggs, milk, coconut oil, honey and vanilla extract
- In another larger bowl, sift the flour and add the baking powder, cinnamon and salt till all is well combined.
- Add the wet ingredients to the dry ingredients and fold in using a spatula till all is well combined and a thick pancake batter is achieved.
- Heat your pan and add oil ready for the pancake batter. (a non-stick pan is best)
- Add the pancake batter 1/4 cup at a time. Cook for 2-3 minutes or until the sides are golden brown on medium – low heat for ease of flipping and to enable the pancake cook well and not burn.
- Flip once you see bubbles forming to let the other side cook.
- Serve the pancakes while still warm. Add strawberries or any other fruit as toppings.
Notes.
* You can use any milk of choice. I used cow milk in this recipe.
** You can use vegetable oil or melted ghee or melted butter instead of melted coconut oil. I used melted coconut oil since its high in healthy saturated fats.
*** You can add another banana for sweetness instead of the honey or use maple syrup.
**** You can use either brown or white rice flour whichever you have on hand. However, brown rice flour is best since its is made from whole grain rice with the bran.
