Potatoes are a good source of vitamin C and B6. When cooked correctly, they can be good for us. Since they are readily available all year long, they can be enjoyed in different ways. One of the healthiest ways is by baking them in the oven using just a little butter or oil.
Preparation and cooking
Gather all your ingredients together and preheat your oven to 200°C. Line your baking tray with parchment paper.
Peel and dice the potatoes ready for boiling.
Place the potatoes in a large cooking pot/sufuria. Cover with water and bring to a boil till soft for about 8-10 minutes. (make sure they don’t over cook and become marshy)
Drain the water and toss them with melted butter, garlic powder, salt, pepper and chopped parsley.
Transfer to a baking tray lined with parchment paper and bake till they start browning for about 20-30 minutes.
Toss them then bake for another 10-20 minutes till golden brown.
Serve them immediately with honey dijon chicken and some vegetables or any other accompaniment of your choice.

- 3 tbsp butter, melted* (see notes for substitute)
- 1 tsp garlic powder
- 1 tbsp fresh parsley, chopped** (see notes for substitute)
- Salt & pepper to taste

* You can use vegetable oil instead of butter
** You can use coriander instead of parsely.
