We have always enjoyed this specific pork recipe in our household. It is very simple and uses only fresh ingredients. Very quick and easy to whip up thus perfect for a week night dinner. The ingredients needed are also very readily available at your nearest grocery shop.
Ingredients
- 1kg pork
- 2 tbspn cooking oil
- 1 onions
- 1 tbspn ginger, garlic & turmeric paste
- 2 bunches coriander (dania) stems & leaves
- 2 tomatoes
- 1 tbspn soy sauce (optional)
- Salt & pepper to taste
Instructions
- Start by cutting your pork into cubes, chopping the onions & tomatoes and making the ginger- garlic & turmeric paste
- Place the pork in a cooking pot / sufuria, cover and let cook until all the water dries up and it starts to turn golden brown. ( It will release its own water).
- At this point, add in the cooking oil and chopped onions and let them cook for a few minutes.
- Once the onions are translucent, add in the ginger-garlic & turmeric paste and let cook till fragrant.
- Add in the coriander stems and let cook for another one minute. Remember to keep stirring.
- Add in the tomatoes and mix. Let cook for about 3 minutes.
- Then add in the soy sauce and cook for another minute.
- Finally season with salt & pepper to taste and garnish with cilantro leaves.
- Serve while hot with ugali or crispy baked potatoes and some greens on the side & enjoy!
