Have you ever bought some potatoes chips or cooked some but were unable to consume all and you have them sitting around in your refrigerator? Here is a quick way to revamp them to a delicious meal. There are just a few ingredients needed for this to have them ready and your way of enjoying this comfort food is really dependent on your taste or what you have on hand. It would actually take less than 15 minutes to be ready.
Ingredients
- 1 tbspn butter or cooking oil
- 1 large onion
- 2 garlic cloves, crushed/minced
- 1 bunch coriander (dania) stems & leaves
- 1 tsp curry powder
- 3-4 tomatoes, pureed
- 2 tbspns tomato sauce/ ketchup
- 1 tsp paprika
- 1 tsp turmeric powder
- 1 tsp chilli/ cayenne pepper (optional)*
- 700g cooked potato chips
- Sea salt & pepper to taste
Instructions
- In a sauce pan, heat the butter (or cooking oil) and once it has melted, add in the onions and let cook till translucent.
- Add in the minced garlic together with dania stems and let cook till fragrant. Add in the curry powder at this point if using it to allow cook for a minute.
- Add in the pureed tomatoes and allow to cook well for about 2-3 minutes then add in the tomato sauce, paprika, turmeric and chilli/ cayenne pepper. Mix well and cook these ingredients until they are well combined and starting to thicken (you can add a splash of water if you prefer your chips saucy).
- Turn the heat to low, and add in your potato chips. Toss them around so that the sauce/masala covers them properly. Season with sea salt & pepper to taste
- Turn off the heat and garnish with coriander/dania leaves.
- Serve with a protein of your choice like honey bbq chicken wings and some vegetables on the side like purple cabbage salad.
Note:
*The amount of chilli or cayenne pepper you put depends on how hot you’d like the masala chips. A little goes along way for those not used to hot/spicy foods.
