This Turmeric brown rice is all vegan. It has been flavored with coconut milk thus very decadent. Can be enjoyed with any stew/curry.
Preparation & cooking:
Start washing your rice and letting it soak for about 10-15 minutes as you mince the garlic, ginger & turmeric, dice the carrots, chop the onion and chop up the cilantro (dania) stems & leaves.
On a cooking pot, add up your oil and add the onions and allow to cook till translucent.
Add in the chopped cilantro (dania) stems, minced garlic, ginger and turmeric and allow to cook till fragrant.
Add in the carrots together with the turmeric powder, paprika, cumin, black pepper and sea salt and stir well.
Drain the rice and add it in. Mix well then add in the coconut milk and water. Stir again, cover and bring to a boil.
Reduce the heat, remove the lid and allow to cook till all the water has evaporated. Once done, fluff with a fork and adjust the seasoning as desired then add your cilantro (dania) leaves. Serve warm with some pulled pork, coconut mbaazi or simple fried pork, coconut chicken curry or any other protein of your choice.
