Pineapple Carrot Salad

This Pineapple carrot salad is quite easy to make. It only requires three key ingredients and no salad dressing is required. It is mostly served in many gatherings in Kenya and always a sweet healthy treat.

Start by preparing all your ingredients. Wash then peel the carrots before shredding them. Followed by dicing up your pineapple.

In a large bowl, mix everything together then refrigerate for about 30minutes before serving.

Serve and enjoy!

Ingredients
  

  • 1 cup diced pineapple
  • cup shredded carrots
  • ½ cup dried raisins or sultanas or a mixture of both.

Method
 

  1. Start by shredding the carrots and dicing the pineapple.
  2. In a large bowl, mix everything together.
  3. Refrigerate for about 30minutes before you serve.
  4. Serve and enjoy.
