We all love some healthy sweet treats as an option for breakfast. These healthy banana oatmeal muffins will leave you satisfied and happy. Am sure you even wouldn’t mind snacking on them during the day with no guilt!
All you need are these 8 simple ingredients.
Oats: This is the key ingredient here and am sure as you are well aware by now the benefits of oats from my Healthy Banana Oatmeal Pancakes recipe besides being gluten free.
Very ripe bananas: Just as on my Healthy Banana Oatmeal Pancakes recipe, there is no sugar added here as the ripe bananas are packed with lots of sweetness naturally.
Eggs: They are also a key component of this recipe. If you can get organic eggs, the better as they are parked with all the nutrients an egg should have.
Milk: You can use regular milk or any plant based milk of your choice. Oat milk or almond milk would work best incase of lactose intolerant people.
Baking powder: It is the raising agent in these muffins.
The other ingredients of course bring about the flavor and they include: nutmeg, cinnamon and salt.
Making the butter:
Gather all your ingredients together and in one bowl mix all the dry ingredients together and all the wet ones in another bowl.
Then mix the contents of the two bowl together.
Scoop the mixture into your muffin cups as below. This butter yields 12 muffins.
At this point, top your muffins with your desired toppings. In my case I used raisins for some and chocolate chips for some.
Bake the muffins at 180℃ for 20-25 minutes until well baked.
Allow to cool on a wire rack before serving.
Ingredients
- 3 cups oats*
- 2 teaspoons baking powder
- 1 teaspoon cinnamon powder
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2-3 very ripe bananas, mashed
- 2 eggs
- 11/2 cup milk**
- Chocolate chips (optional)
- Raisins (optional)
Instructions
1. Preheat your oven to 180℃
2. Line your muffin tin with muffin cups.
3. In a large bowl combine all the dry ingredients together, that is, the oats, baking powder, cinnamon, nutmeg and salt.
4. In another bowl, mix together the wet ingredients, that is, mashed bananas, eggs, and milk until well combined.
5. Mix the contents of the two bowls together till well incorporated
6. Pour the mixture into your prepared muffin cups and sprinkle the toppings at hand like chocolate chips and raisins.
7. Bake for 20-25 minutes or until set and well cooked.
8. Allow to cool then serve with your favorite breakfast drink or juice.
Notes:
* Make sure your oats are gluten free
** For lactose intolerance individuals, use plant based milk. Oat milk or almond milk would work best.
