Gluten Free Pumpkin Bread

We keep giving you more options that are gluten free each passing day. Today I share with you this delicious Gluten Free Pumpkin bread which requires a few ingredients and voila!

This is how it comes out when you slice it after cooling down.

Ingredients

  • 1 cup rice flour
  • 1/2 cup tapioca flour
  • 1/2 cup potato starch
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice*
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup molasses or brown sugar
  • 4 tablespoons coconut oil, melted
  • 1/4 cup buttermilk or plain yogurt
  • 2 teaspoons vanilla extract
  • 1 cup pumpkin puree**

Instructions

  1. Preheat your oven to 180°C
  2. Line a 9″ X 5″ loaf/ bread tin with parchment paper and set a side.
  3. In a bowl, sift the rice flour, tapioca flour, potato starch, baking powder and baking soda. Add in the pumpkin spice and salt then mix till well combined then set aside.
  4. In another bowl, combine the eggs, molasses/brown sugar, melted coconut oil, buttermilk/plain yogurt and vanilla extract, till well combined. Then add in the pumpkin puree.
  5. Bring together the dry and wet ingredients and mix till all is well incorporated.
  6. Pour the mixture into your prepared loaf pan ready for baking.
  7. Bake  at 180°C for about 40- 60 minutes or until the bread is well baked and a toothpick inserted inside comes out clean. Cover with an aluminium foil halfway through to avoid over-browning on top.
  8. Allow to cool completely before slicing then serve. Enjoy!

**  You can make your own pumpkin puree by steaming pumpkins till fork tender or even roast in an oven at 180°C for about 40- 60 minutes  till fork tender then mash it up with a fork or use a food processor to make the puree
