The combination of apples and carrots in a muffin brings out great flavors. Better yet, it’s a way of having your fruit and veggies in a muffin! These apple carrot muffins are classified as a healthy treat since all the ingredients used are as natural as possible:
100% whole wheat flour (better yet atta mark 1) has the bran rich in fiber, vitamins and minerals; the germ rich in iron and nutrients and the endosperm rich in carbohydrates and proteins.
Apples & Carrots are rich in fiber.
Jaggery (better yet known as sukari nguru) is a great source of potassium and can aid weight loss.
To begin start by measuring out all your ingredients then preheat your oven to 180°C and line your muffin tin with muffin cases.
In one bowl, sift the flour, baking soda, ginger and cinnamon. Add in the salt, desiccated coconut and raisins/sultanas/nuts & seeds if using and mix till well combined then set aside.
In another bowl, combine the eggs, melted coconut oil, orange/lemon juice, vanilla extract and jaggery/brown sugar till well combined.
Bring together the dry and wet ingredients and mix till all is incorporated
Fold in the carrots and apple to the muffin batter
Pour the mixture into muffins cups.
Bake for 25-30 minutes at 180°C until the muffins are baked and a toothpick inserted inside comes out clean.

- 2 teaspoons baking soda
- 1/2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup desiccated coconut
- 1/2 cup raisins or sultanas or nuts & seeds of choice (optional)
- 3 eggs
- 1/2 cup coconut oil, melted
- 1/4 cup orange/ lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup jaggery** or brown sugar
- 2 medium sized carrots, grated
- 1 apple, grated
Instructions
- Preheat your oven to 180℃
