We are at it again with simple yet healthy chicken recipe. This particular chicken recipe is loaded with vegetables hence the only accompaniment you’d need if any is a carb. You can as well use the vegetables you have at hand. It’s that flexible!
Preparation and cooking
Start by cutting the chicken breasts in small bite size pieces and gathering all your ingredients together.
Then in a separate bowl, combine the pineapples, soy sauce, honey, corn starch and the ginger, garlic and turmeric paste.
Heat the coconut oil in a non-stick cooking skillet/sufuria over medium heat.
Add the chicken pieces to the hot oil to cook while stirring till it begins to brown. Season with salt and pepper.
Once well browned, add in the bell peppers, carrots, french beans and onions and let the vegetables cook for about 3-4 minutes.
Add the pineapple mixture and let cook for another 3-4 minutes.
Garnish with coriander/ parsley.
Serve with brown rice or whole wheat chapatis or crispy baked potatoes or any other accompaniment of your choice.

- 4 chicken breasts
- 1 cup pineapple, cubed
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp cornstarch
- 1 tbsp minced garlic, ginger and turmeric paste
- 1 1/2 tbsp coconut oil
- 1 green bell pepper (hoho), diced
- 2 carrots, diced
- 1 cup french beans, chopped
- 1 onion, diced
- Salt & pepper to taste
Instructions

Note:
This recipe is very customize-able depending on the vegetables you have on hand. You can use green peas, red or yellow or orange capsicums (hohos), caugettes etc
