One of the ways to get your dietary vegetable requirement is by having a simple and healthy salad. This Purple Cabbage Salad is refreshing, crunchy and can be taken as a side with a meal.
It is also a quick fix and colorful guaranteeing you lots of nutrients. All you need is:
Purple cabbage: the main star of the salad
Carrots: a good source of beta carotene, fiber, vitamin K1, potassium and antioxidants
Apples : crunchy & sweetness addition
Cucumbers: gives the refreshing vibe coz they are high in water and loaded with other vitamins and minerals.

Ingredients
Salad
- 1/2 Purple cabbage
- 2 medium carrots
- 2 apples
- 1 large cucumber
Dressing
- 2 tablespoon lemon juice
- 2 tablespoons extra virgin olive oil
- 2 tablespoons honey
- Salt & pepper to taste
Instructions
- Clean all the ingredients.
- Using a medium sized grater, grate the purple cabbage, carrots, apples & cucumber.
- Combine them, add in the dressing, season with salt & pepper then let sit in the fridge for about 15minutes before serving.
- Enjoy alone or as a side with a meal of your choice.
