These baked sweet potato cubes will definitely blow your mind once you try them out. Am a sweet potato lover and making them in different ways is something I truly enjoy. This recipe is quite simple and the outcome is flavourful crispy sweet potatoes on the outside and soft on the inside. You can have them as a side with any main of even enjoy as a breakfast.

This recipe is a true indication that sweet potatoes can be made in other ways not just boiling them in water then having them with tea for breakfast. We really enjoy them in our household in various ways including this one.

Sweet potatoes are starchy root vegetables that are rich in fiber, vitamins, and minerals. They’re also high in antioxidants which promotes gut health, may help protect against certain type of cancers among other benefits.

Preparation & baking:

We start by preheating the oven to 180°C then line a baking tray/sheet with parchment/baking paper. As the oven is preheating, peel the sweet potatoes then cut them in cubes. Make sure they are almost similar in size for better baking.

Next, spread them on the lined baking sheet then add in the cooking oil, paprika, onion powder, and garlic powder. Toss till the sweet potatoes are well coated with the spices then spread the cubes into one even layer. Make sure the sweet potato cubes are spaced out and not touching one another or they will steam and not roast.

Bake for 15 minutes, toss then another 7-10 minutes keeping an eye on them so that they do not burn.

Once they are done roasting, remove from oven. Sprinkle with the sea salt then serve while hot as a side or even for breakfast.

Ingredients
  

  • 2 large (500g) sweet potatoes, peeled & cubed
  • 2 tbsp cooking oil
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp sea salt (to use after roasting)

Instructions
 

  • Start by preheating your oven to 180°C then line a baking tray/sheet with parchment/baking paper.
  • Peel then cube the sweet potatoes. Place them on the baking tray/sheet lined with parchment/baking paper then add in the cooking oil, paprika, onion powder, and garlic powder. Toss till the sweet potatoes are well coated with the spices then spread the cubes into one even layer. Make sure the sweet potato cubes are spaced out and not touching one another or they will steam and not roast.
  • Bake for 15 minutes, toss then another 7-10 minutes keeping an eye on them so that they do not burn.
  • Once they are done roasting, remove from oven. Sprinkle with the sea salt then serve while hot as a side or even for breakfast.

Notes

Remember to add the salt after baking. If you add it before, it will make the sweet potatoes soggy instead of crispy.
