This easy maize meal bread (cornbread) is slightly sweet with a tender crumb perfect topped with some jam alongside a cup of tea/coffee or on it’s own with a bowl of hot soup or stew.
Ingredients for maize meal bread (cornbread)
Here are the main ingredients you’ll need for this recipe:
- Unsalted butter: This is one of the main flavors in this maize meal bread/cornbread recipe. It also makes the edges crispy and golden.
- Maize meal flour or corn meal: What is a maize meal bread/ cornbread without maize meal/corn meal? It is the main flavor. Equal parts maize meal flour/cornmeal and all purpose flour makes the BEST cornbread with super crunchy edges.
- All-Purpose Flour: it will allow the bread to rise a bit and give it the spongy, cakey consistency of bread.
- Baking powder & baking soda: helps the dough rise and expand as it bakes.
- White granulated sweetener: This gives the bread a touch of sweetness it needs to balance out the maize meal/corn and bread flavors. You can actually use monkfruit sweetener. However, it is optional especially if you are going to have it as a side with a stew.
- Salt: it brings out the complexity of all the flavors in the bread.
- Egg: it basically binds everything together and helps the bread to rise.
- Milk: brings about a rich and moist bread.
- Buttermilk: It is another flavor booster besides butter. It also makes the bread extra moist. Best add on while using butter instead of oil while baking for moistness.

Preparation & baking:
Start by adding half of the butter on your 8-12 inch (I used a 12 inch) cast iron skillet then place in the oven. Preheat to 200°C.
Secondly, melt the rest of the butter & put aside.

In a large mixing bowl, add the maize meal flour or corn meal, all purpose flour, baking soda, baking powder, granulated sweetener (if using) and sea salt. Whisk till well combined.

In a small bowl, crack the egg then whisk. Add in the milk, buttermilk and melted butter. Whisk till well combined.

Add the wet ingredients to the dry ingredients to form a thick batter.

Carefully remove the cast iron from the oven & swirl the melted butter. Pour in the batter into the cast iron.

Bake at 200°C for 20 -25 minutes or until it’s browned on top and a skewer inserted in the middle comes out clean.

Allow to cool then slice and serve.

- 2 tsp baking powder
- 2 tbsp granulated sweetener, optional
- ½ tsp sea salt
- 1 egg room temperature
- ¾ cup milk
- ¾ cup buttermilk mala
Instructions

- Melt the rest of the butter & put aside.
