Minced beef stew with green peas (Bolognese sauce)

This minced beef stew with green peas (Bolognese sauce) is amazingly delicious when served with some rice or pasta or mashed potatoes. It is so rich and flavorful.

Preparation & cooking:

  • In a cooking pot/ sufuria, heat up the cooking oil then add the diced onions and carrots. Let them cook on medium-high heat for about 7-10 minutes. This is a flavour building stage.
  • Add in the minced garlic together with cilantro (dania) stems at this point and allow to cook for a minute or until fragrant.
  • Add in the minced beef. Using a wooden spoon, break it up as you stir and allow to cook for about 20 minutes until all the liquid that it will release has evaporated and it starts browning.
  • Add a cup of the beef broth or stock or water and let it simmer then add in the red wine vinegar, Worcestershire sauce, grated/pureed tomatoes, tomato paste, thyme, seasoning cubes, honey and bay leaves. Stir to combine everything and cook on medium heat for about 20 minutes. You can add more water so as to make it more saucy. Remember to keep stirring every now and then.
  • After about 20 minutes, add in the pre cooked green peas. Stir to combine and allow to cook for 5 minutes. Remember to season with sea salt and black pepper.
  • Switch off the fire and stir in the cilantro (dania) leaves then fish out the bay leaves.
  • Serve with some brown rice or pasta or mashed potatoes and a side of veggies or salad.

  • 3 sprigs fresh thyme or 1 tsp dried thyme

  • 1 tbsp honey
  • 2 bay leaves, dried
  • Sea salt and black pepper, to taste
