I already have other brunch recipes here on the blog including <a href=\"https:\/\/gwenjikoni.com\/index.php\/2021\/05\/04\/protein-packed-breakfast-casserole\/\">Protein packed breakfast casserole<\/a> and <a href=\"https:\/\/gwenjikoni.com\/index.php\/2021\/06\/03\/sweet-potato-breakfast-hash-or-sweet-potato-shakshuka\/\">Sweet Potato Breakfast Hash or Sweet Potato Shakshuka<\/a>.<\/p>\n\n\n\n<p>Skillet breakfast potatoes is another brunch idea that we enjoy in our household and a great alternative to the <a href=\"https:\/\/gwenjikoni.com\/index.php\/2021\/05\/04\/protein-packed-breakfast-casserole\/\">Protein packed breakfast casserole<\/a> incase you don\u2019t have an oven. It is also adaptive in the sense that you can switch the potatoes with sweet potatoes as well as use the spices of your preference. You can even use regular minced meat incase you don\u2019t have sausages on hand. It is protein packed as well and very filling.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Preparation and cooking:<\/h5>\n\n\n\n<p>Start by preparing all your ingredients. Peel the potatoes and dice them into small cubes. Cover with water and bring to a boil for about 5-7 minutes. (make sure they don\u2019t over cook and become marshy). Keep stirring and allow to cook till it starts browning. (You can use a potato masher to breakdown the sausages or even a spatula or wooden spoon). Add the per-boiled potatoes together with all the spices, black pepper & sea salt.
