One of those meals that we like sprucing up besides potato chips to masala chip is steamed brown rice to some decadent stir fried vegetable brown rice. In most cases the other ingredients used to revamp this rice are always in the fridge as well and in the pantry.

Some of the ingredients you need are:

Cashew nuts: if they are raw, all you need to do is toast them on a pan to roast. If already roasted, you are one step forward. Cashew nuts bring about a nice bite and flavor to this dish besides been a source of great plant protein.

Vegetables: Carrots are so versatile and are is high in beta carotene. Capsicums on the other hand are excellent source of vitamin A and C.

The good thing about this particular recipe, you can customize it depending on what vegetables you have on hand. You can use green peas or french beans! Just use whatever vegetable you prefer and that which you have on hand.

Soy sauce: What is a stir fry without soy sauce? Anyway, you can use tamari incase you are gluten intolerant as soy sauce is known to have gluten.

Let’s get cooking:

Start by toasting the cashew nuts. You can do this by placing the cashews on a hot pan on a stove top. Keep toasting them to avoid them been burnt.
