Sweet Corn Mukimo With Pumpkin Leaves.

This sweet corn mukimo with pumpkin leaves will make your kids love mukimo once they taste this especially if they love sweet things. The sweet corn is basically what’s going to win them over. Incase you are new here and don’t know what mukimo is, it’s basically mashed potatoes together with any beans of choice and some green leafy vegetable.

In this mukimo, we are specifically using green peas and pumpkin leaves rather commonly known as “kahurura”.

Preparation & cooking:

Start by gathering all your ingredients together. Peel the potatoes and cube them, pre cook the green peas, sweet corn and pumpkin leaves.

Add your potatoes to a cooking pot together with water and allow to boil till they are fork tender.

As the potatoes are cooking, add the green peas together with the cooked pumpkin leaves into a blender. Add a dash of water and puree. You can use a food processor as well. Then set aside.

On another pot or pan, heat some oil and fry the onions till they are golden brown or caramelized then set aside.

Once the potatoes are fork tender, drain the water and set it aside incase you need some while mashing. Using a potato masher or a wooden spoon, mash the potatoes then add in the pureed green peas and pumpkin leaves.

Transfer them into a stand mixer mixing bowl and using the whisk attachment, whisk till everything is well incorporated. You can stop the stand mixed after sometime to scrape down the sides. You can use a hand mixer if that’s what you have on hand or potato masher or wooden spoon though it could take you longer to achieve a smooth mash.

Finally add in the sweet corn and the onion. Using a spatula, combine everything together till well incorporated.

Serve with any main of your choice and some veggies and enjoy! I served mine with The Best Honey Barbecue Chicken Wings and some (collard greens) sukuma wiki.
