In a large bowl combine the mangoes, onions, cilantro (dania) leaves and bell pepper if using. Season with sea salt & black pepper.

Add the extra virgin olive oil & lemon juice/ apple cider vinegar. Toss to combine and adjust the seasoning if need be. Refrigerate to about 30 minutes before serving.

Simple Mango salad
This simple mango salad is so refreshing and a very good way of having mangoes especially while they are in season.
Ingredients
- 2 large mangoes, ripe, peeled & diced
- 1 red onion, diced
- 1 bunch fresh cilantro (dania) leaves
- ½ red bell pepper, diced (optional)
- Sea salt & black pepper, to taste
- ½ tbsp extra virgin olive oil
- ½ tbsp lemon juice or apple cider vinegar
Instructions
- In a large bowl combine the mangoes, onions, cilantro (dania) leaves and bell pepper if using. Season with sea salt & black pepper.
- Add the extra virgin olive oil & lemon juice/ apple cider vinegar. Toss to combine and adjust the seasoning if need be.
- Refrigerate to about 30 minutes before serving.
Notes
Be sure to use ripe mangoes. Don’t attempt to use overripe ones as the salad can be too soggy.
