Simple Mango salad

This simple mango salad is so refreshing and a very good way of having mangoes especially while they are in season.

Ingredients
  

  • 2 large mangoes, ripe, peeled & diced
  • 1 red onion, diced
  • 1 bunch fresh cilantro (dania) leaves
  • ½ red bell pepper, diced (optional)
  • Sea salt & black pepper, to taste
  • ½ tbsp extra virgin olive oil
  • ½ tbsp lemon juice or apple cider vinegar

Instructions
 

  • In a large bowl combine the mangoes, onions, cilantro (dania) leaves and bell pepper if using. Season with sea salt & black pepper.
  • Add the extra virgin olive oil & lemon juice/ apple cider vinegar. Toss to combine and adjust the seasoning if need be.
  • Refrigerate to about 30 minutes before serving.

Notes

Be sure to use ripe mangoes. Don't attempt to use overripe ones as the salad can be too soggy.
