This peanut salad is the it for the lovers of peanuts and peanut butter. It is quite easy to prepare and its also a crowd pleaser. I truly love this salad since the peanut butter dressing makes everything taste amazingly delicious.
PREPARATION & MAKING THE SALAD:
The salad ingredients are truly simple and easy to prepare. All you need is an iceberg lettuce, cucumber, coloured bell peppers (hohos), chives/green onions and of course PEANUTS!
The below photo shows the peanut butter salad dressing ingredients which include: extra virgin olive oil, apple cider vinegar, light soy sauce, peanut butter, garlic, ginger, honey, sea salt and black pepper. You can use minced garlic and ginger for a more vibrant flavour if that’s what you have on hand.
Start by chopping the iceberg lettuce, clean under running water then drain thoroughly using a salad spinner.
Next, wash the cucumber and the bell peppers then dice them. Chop the chives or green onions too at this point.
In a large mixing bowl, add the chopped lettuce and chives/green onions together with the diced cucumber, yellow and red bell peppers and peanuts then mix well.
In a small jar, add the extra virgin olive oil, apple cider vinegar, light soy sauce, peanut butter, ginger, garlic, honey, sea salt & black pepper then close the lid and shake vigorously for the dressing to be well incorporated.
Drizzle the salad dressing over the salad mixture and toss to coat.
Serve right away or keep in the fridge until ready to serve.

Ingredients
