Healthy Strawberry Breakfast Parfait

What better way to start the day than with this healthy strawberry breakfast parfait! It’s the perfect bite of goodness. It’s healthy since Greek yoghurt is used instead of cream.

WHAT YOU WILL NEED.

Let’s talk about the ingredients needed to make this delicious treat:

Strawberries: Since they are the star of this dish, be sure to get the juicy and sweet ones.

Greek yoghurt: This is a healthy replacement of cream. It is silky and luscious.

Toasted oats or granola: This brings about the crunch in the parfait yet very high in fiber. If you don’t have granola on hand, toasting your own oats on a pan is a great option! How to is on the recipe card below. Incase you need a granola recipe, click here.

Honey: This is an optional sweetener.

HOW TO MAKE HEALTHY STRAWBERRY BREAKFAST PARFAIT:

The making of this healthy strawberry breakfast parfait is an easy 10 minute task yet it yields a healthy & decadent breakfast or dessert option. It can even be made the night before and enjoyed in the morning:

  1. Toasting the oats: This is a necessary step if you don’t have granola on hand. Start by melting a tablespoon of butter on a pan then add in the oats. Keep toasting till golden brown.
  2. Making the strawberry sorbet: Add the frozen strawberry in a high power blender or a food processor together with honey if using then blend for a few seconds.
  3. Assembling the parfait: Add a few tablespoons of the toasted oats or granola on your serving glasses. Follow by a few tablespoons of the strawberry sorbet then the Greek yoghurt. Repeat till the glass is full. Serve & enjoy.

Ingredients Method Notes

Ingredients
  

  • ½ cup Toasted oats or granola
  • 1 cup Frozen strawberries or strawberry sorbet
  • 1 tbsp Honey, optional
  • 1½ cup Greek yoghurt

Method
 

How to toast oats:
  1. Melt a tablespoon of butter on a pan then add in the oats. Keep toasting till golden brown.

  1. Add the frozen strawberry in a blender (high power) or a food processor together with honey if using. Blend away!
Assembling the parfait:
  1. Add a few tablespoons of the toasted oats or granola on your serving glasses. Follow by a few tablespoons of the strawberry sorbet then the Greek yoghurt.
    Repeat till the glass is full.
    Serve & enjoy.

Notes

Incase you don’t have a high speed blender, add a little liquid whenever you are blending frozen strawberries so as not to over work it. A food processor can be used instead.
You can as well opt to use fresh strawberries or crush them with a pestle.
