This Fried Collard greens (Sukuma Wiki) recipe is quick and easy to cook guaranteeing you a delicious and healthy leafy green side dish that goes well with any main of your choice. Perfect accompaniment for many meat (beef, fish, chicken, lamb and goat) dishes as well as meatless main dishes. It’s pretty easy to prepare and takes less than 30 minutes from start to end.
PREPARATION & COOKING:
Begin by chopping the sukuma wiki (collard greens), dicing the onion and grating or pureeing the tomatoes.
In a large cooking pot, heat the cooking oil over low heat; add the diced onions and cook for 5 minutes or till they are translucent. Stir in the curry powder and cook for about a minute.
Add in the tomatoes, sea salt & black pepper. Stir then allow to cook while covered for about 5 minutes or until the oil floats.
Add the sukuma wiki (collard greens) and cover to allow them wilt for about 3-5 minutes.
Stir the sukuma wiki (collard greens) to mix well with the tomato sauce then cook till they are tender.
Switch off the heat and serve with any main of your choice.
