The Best Fried Kenyan Collard Greens (Sukuma Wiki)

This Fried Collard greens (Sukuma Wiki) recipe is quick and easy to cook guaranteeing you a delicious and healthy leafy green side dish that goes well with any main of your choice. Perfect even with some ugali and beef stew.

Ingredients
  

  • 2 tbsp cooking oil
  • 1 large onion, diced
  • 2 tbsp curry powder
  • 3 tomatoes, grated/pureed
  • 4 bunches sukuma wiki (collard greens), chopped
  • Sea salt & black pepper, to taste

Instructions
 

  • Begin by chopping the sukuma wiki (collard greens), dicing the onion and grating or pureeing the tomatoes.
  • In a large cooking pot, heat the cooking oil over low heat; add the diced onions and cook for 5 minutes or till they are translucent. Stir in the curry powder and cook for about a minute.
  • Add in the tomatoes, sea salt & black pepper. Stir then allow to cook while covered for about 5 minutes or until the oil floats.
  • Add the sukuma wiki (collard greens) and cover to allow them wilt for about 3-5 minutes.
  • Stir the sukuma wiki (collard greens) to mix well with the tomato sauce then cook till they are tender.
  • Switch off the heat and serve with any main of your choice.
