Are you ready for the simplest yet the best ever pork masala? It’s super delicious yet so simple to make.
WHAT YOU WILL NEED:
Let’s talk about the ingredients needed to make this easy and delicious pork masala:
- Pork: I prefer using pork shoulder but you can use pork butt as well. You can opt for boneless as well or with bone.
- Cooking oil: Always go for what you regularly use or what you prefer be it vegetable oil, olive oil, coconut oil or even ghee.
- Onions: This work magic and flavors the pork. You can use either red or white and as much as you would prefer.
- Garlic & ginger paste: these are essential for building flavour.
- Spices: I used garam masala, coriander powder, paprika powder as the preferred spices. You can also add turmeric and cumin if you have them on hand.
- Tomato paste & tomatoes: these two add a depth of flavour as well as assist in creating the sauce.
- Cilantro or chives or parsley: As much as we use this for garnish, it does add some flavour to the dish. Choose the garnish of your choice according to the flavour you are going for or availability.
- Sea salt & black pepper: Use according to taste.
PREPARATION AND COOKING:
- Start by preparing all your ingredients, mince the ginger & garlic, dice the onions and puree or grate the tomatoes.
- Heat some oil in a pan then sear the pork cubes till golden brown. Make sure to use a wide pan to ensure they are well seared then cook till almost done.
- Add the onions then stir. Allow the onions to cook till soft.
- Follow by adding in the ginger-garlic paste. Stir & let it cook for about 30 seconds till fragrant.
- Add in the spices and allow them to cook for a minute.
- Add in the tomato paste and allow to cook for about 2 minutes.
- Add the pureed tomatoes & stir. Cover and allow to cook for about 5 minutes.
- Next, add in the bay leaves & a cup of water. Stir then cover to cook for about 8 minutes. Remember to season with salt & pepper to taste
- Finally remove the bay leaves then garnish with cilantro or chives or parsley and serve with your desired accompaniment.

- 1 cup water
- Sea salt & black pepper, to taste
