One of the other ways I use my stand mixer besides making cakes is making Mukimo of any kind including mushenye and even mashed potatoes. Using the mixer results into smooth mash. No lumps. One of the big sisters came in to help (slide 7) and we all had fun while at it! We finally enjoyed the cake and it was damn delicious! (Slide 9 is a slice) We used cream cheese frosting and the first batch backfired! Careful while you are making yours Here is the recipe: ( Save it for later) 👇🏾 CARROT CAKE RECIPE: •1 1/3 cup milk •150g brown sugar •150g castor sugar •3/4 cup oil • 1 tsp vanilla extract • 300g all purpose flour • 1 1/2 tsp baking powder • 1 1/2 tsp baking soda • 1 tsp cinnamon powder • 1/4 tsp sea salt • 300g grated carrots METHOD: 1. Pre heat the oven to 180 C. Prepare 2 8 inch round cake tins 2. In a medium bowl, combine milk, oil, vanilla extract and the sugars. Mix well till the sugar’s dissolved 3. In an another large bowl, whisk all the dry ingredients together. 4. Add the wet ingredients to the dry ingredients and mix till well combined 5. Gently fold in the grated carrots into the batter using a spatula 6. Divide the batter between the two pans 7. Bake for 35-40minutes or until when you insert a skewer, it comes out clean 8. Allow to cool completely before frosting CREAM CHEESE FROSTING: • 250g cream cheese (room temperature) • 250g butter (room temperature) • 250g icing sugar (sifted) • 1 tsp vanilla extract METHOD: 1. Whisk the butter until light & fluffy. Great & easier while using a stand mixer or electric mixer 2. Add the icing sugar & vanilla extract in 2-3 batches. Mix until smooth 3. Add the cream cheese and mix until well blended and smooth. Stop once it’s smooth as it could split. DECORATING: As desired.
