Almond and Coconut Granola

This almond and coconut granola is simple and easy to make plus it makes your home smell incredible. It's also oil free and refined sugar free.

- 4 cups rolled oats
- 1 cup raw almonds, crushed
- ½ cup pumpkin seeds
- ¼ cup flaxseeds
- 1 tsp sea salt
- 1 cup desiccated coconut or coconut flakes
- ½ cup honey
- 1 tsp vanilla extract, optional
- ½ cup (113g) unsalted butter, melted
Preheat oven to 180°C. Line a large baking tray with parchment/baking paper/silicon mat and set aside.
In a large bowl, mix together the oats, crushed almonds, pumpkin seeds, desiccated coconut or coconut flakes and flaxseeds then set aside.
In a separate bowl, add the melted butter, honey, vanilla extract and sea salt. Whisk everything till well combined.
Add the wet ingredients to the dry ingredients. Mix well and make sure all of the oats are completely coated.
Spread the raw granola evenly on the baking sheet and bake for 20-25 minutes, lightly stirring about halfway through.
Remove from oven and allow granola to cool completely, then store in an airtight container ready to be enjoyed.
