Baked Sweet Potato Cubes

These baked sweet potato cubes are so flavourful and versatile! They can be served as a side with any meal or for breakfast or even with a soup or salad as "croutons"! Simple to make yet delicious.

Ingredients
  

  • 2 large (500g) sweet potatoes, peeled & cubed
  • 2 tbsp cooking oil
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp sea salt (to use after roasting)

Instructions
 

  • Start by preheating your oven to 180°C then line a baking tray/sheet with parchment/baking paper.
  • Peel then cube the sweet potatoes. Place them on the baking tray/sheet lined with parchment/baking paper then add in the cooking oil, paprika, onion powder, and garlic powder. Toss till the sweet potatoes are well coated with the spices then spread the cubes into one even layer. Make sure the sweet potato cubes are spaced out and not touching one another or they will steam and not roast.
  • Bake for 15 minutes, toss then another 7-10 minutes keeping an eye on them so that they do not burn.
  • Once they are done roasting, remove from oven. Sprinkle with the sea salt then serve while hot as a side or even for breakfast.

Notes

Remember to add the salt after baking. If you add it before, it will make the sweet potatoes soggy instead of crispy.
