Easy Maize Meal Bread (Corn bread)

This easy maize meal bread (cornbread) is slightly sweet with a tender crumb topped with some jam alongside a cup of tea/coffee or on it's own with a bowl of hot soup or stew.

Ingredients
  

  • 60 g unsalted butter
  • 1 cup maize meal flour or corn meal
  • 1 cup all purpose flour
  • ½ tsp baking soda
  • 2 tsp baking powder
  • 2 tbsp granulated sweetener, optional
  • ½ tsp sea salt
  • 1 egg room temperature
  • ¾ cup milk
  • ¾ cup buttermilk mala

Instructions
 

  • Add half of the butter on your 8-12 inch (used a 12 inch) cast iron skillet then place in the oven. Preheat to 200°C.
  • Melt the rest of the butter & put aside.
  • In a large mixing bowl, add the maize meal flour or corn meal, all purpose flour, baking soda, baking powder, granulated sweetener (if using) and sea salt. Whisk till well combined.
  • In a small bowl, crack the egg then whisk. Add in the milk, buttermilk and melted butter. Whisk till well combined.
  • Add the wet ingredients to the dry ingredients to form a thick batter.
  • Carefully remove the cast iron from the oven & swirl the melted butter.
  • Pour in the batter into the cast iron and bake at 200°C for 20 -25 minutes or until it's browned on top and a skewer inserted in the middle comes out clean.
  • Allow to cool then slice and serve with any stew, curry or drink of choice.

Notes

Incase you don't have a cast iron skillet, you can use an 8-12 inch normal baking tin. In this case, you don't have to preheat it. Just melt the butter and spread it around.
Granulate sweetener of choice can either be castor sugar or table sugar or stevia or monkfruit sweetener.
