- Sauté the onions: Heat the cooking oil in a large sufuria or pan over medium heat. Add the diced onions and cook until they turn golden brown. This step gives the pilau its deep flavor.
- Add the minced beef: Stir in the minced beef and cook until browned. Break it apart as it cooks to prevent clumping.
- Season with spices: Add the ginger-garlic paste (or powders), pilau masala, salt, and pepper. Stir well and let it cook for about 3–4 minutes until fragrant.
- Add rice and stock: Rinse the rice until the water runs clear, then add it to the pot. Pour in the beef stock (or water), stir to combine, and bring to a gentle boil.
- Simmer to perfection: Reduce the heat to low, cover the pot, and let it cook undisturbed for 15–20 minutes, or until the rice is fluffy and all the liquid has been absorbed.
- Fluff and serve: Once done, fluff the pilau gently with a fork. Serve hot with kachumbari, avocado, or a simple salad.
