Minced Beef Pilau

A flavorful, one-pot Kenyan-style pilau made with minced beef and aromatic spices. It's easy, hearty, and perfect for family meals.

Ingredients
  

  • 1 kg minced beef
  • 4 tbsp cooking oil
  • 3 large onions,, diced
  • 1 tbsp ginger-garlic paste, or 2 tsp each of ginger and garlic powder
  • 2 tbsp pilau masala
  • 2 cups basmati rice
  • 4 cups beef stock or water
  • Salt and pepper to taste

Method
 

  1. Sauté the onions: Heat the cooking oil in a large sufuria or pan over medium heat. Add the diced onions and cook until they turn golden brown. This step gives the pilau its deep flavor.
  2. Add the minced beef: Stir in the minced beef and cook until browned. Break it apart as it cooks to prevent clumping.
  3. Season with spices: Add the ginger-garlic paste (or powders), pilau masala, salt, and pepper. Stir well and let it cook for about 3–4 minutes until fragrant.
  4. Add rice and stock: Rinse the rice until the water runs clear, then add it to the pot. Pour in the beef stock (or water), stir to combine, and bring to a gentle boil.
  5. Simmer to perfection: Reduce the heat to low, cover the pot, and let it cook undisturbed for 15–20 minutes, or until the rice is fluffy and all the liquid has been absorbed.
  6. Fluff and serve: Once done, fluff the pilau gently with a fork. Serve hot with kachumbari, avocado, or a simple salad.
