Pulled Pork/Carnitas Fried Brown Rice

This Pulled Pork/Carnitas Fried Brown Rice is a quick meal whenever you have some left over pulled pork and rice in the fridge. It basically takes 15 minutes or less. Very flavorful and delicious.

- 3 tbsp cooking oil*
- 1 large onion**
- 250 g pulled pork/carnitas
- 2 cups cooked brown rice***
- 2 tbsp light soy sauce****
- 1 bunch chives******
Heat up a large non stick pan/wok on medium heat. Add in the cooking oil and onions. Mix well and allow to cook for about a minute or until the onions are translucent.
Add in the pulled pork/carnitas. Mix it well and cook for a minute or two.
Add the cooked brown rice and soy sauce then stir well to combine. Allow to cook for another 3- 4 minutes then turn off the heat.
Add in the chives, fluff and serve hot.
*Feel free to use any type of cooking oil you have on hand. Be it olive, coconut, canola etc.
**You can use any onion of choice. Red onion and green onions are most flavourful with this fried rice.
***You can substitute brown rice with white rice but I guarantee you brown tastes better and it’s the healthier option.
****I prefer the light soy sauce to dark soy sauce with this recipe. Feel free to even try the mushroom soy sauce or even tamari if you are on a gluten free diet.
*****You can substitute chives with cilantro (dania) or parsley. Choose your garnish!
