Sausage & Veggies Pasta Stir Fry

This Sausage & Veggies Pasta Stir Fry is easy & quick to make yet tasty and the perfect weeknight lunch or dinner. You can use any vegetable yo have on hand or even mix them up to have it more healthy.

Ingredients
  

  • 2 tbsp cooking oil
  • 1 large onion diced
  • 4 carrots, peeled & diced or julienne
  • 8 sausages
  • 400 g pasta of choice
  • 1 bunch cilantro (dania) / chives/ parsley leaves, for garnish
  • Sea salt & black pepper to taste

STIR FRY SAUCE

  • 1 tbsp Light soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tbsp honey
  • 1 tsp corn starch
  • 2 tbsp pasta water

Instructions
 

  • Start by preparing all your ingredients. Dice your onions, julienne the carrots and chop the cilantro (dania)/parsley/chives.
  • On a large non-stick pan heat one table spoon cooking oil over medium heat then fry the sausages till they are golden brown all through then set aside.
  • As the sausages are frying, cook your pasta as per the package instructions, drain then set aside. Remember to reserve some for making the sauce.
  • On the same large non stick pan that you fried the sausages, heat the remaining oil to fry the onions and the carrots till al dente.
  • As the onions and carrots are frying, chop the sausages then add them in.
  • Add all the sauce ingredients into a small bowl and stir well to combine then add to the sausages.
  • Follow by adding the pre cooked pasta to the sausages and the sauce. Stir well till well combined. Allow to cook for 2- 3 minutes then turn off the heat.
  • Garnish with the cilantro/parsley/chives, and serve hot.

Notes

  • You can use any type of sausages that you have on hand. This includes, either chicken or beef or pork.
  • Feel free to use any type of cooking oil you have on hand. Be it olive, coconut, canola etc.
  • You can use any onion of choice. White onions and green onions are most flavorful in stir fries.
  • You can substitute pasta with noodles.
  • I prefer the light soy sauce to dark soy sauce with this recipe. Feel free to even try the mushroom soy sauce or even tamari if you are on a gluten free diet.
  • You can chop or dice the carrots into your desired shape. You can as well include more veggies like broccoli, French beans, zucchini or spinach. The vegetable list is endless.
