Spicy Hibiscus Tea (Zobo Drink)

This spicy hibiscus tea recipe combines the tangy flavor of hibiscus petals with aromatic spices like cinnamon, cardamom, ginger, and cloves, plus the natural sweetness of pineapple peels. - pineapple peels, from a whole pineapple
- 4-6 whole cloves
- 4-6 pods cardamom, slighlty crushed
- 3 cinnamon sticks
- 1 thumb size ginger, grated/minced
- ¼ cup hibiscus petals
- 2½ cups water
- 2-4 tsp sweetener of choice, optional.
Begin by rinsing the pineapple peels thoroughly to remove any dirt or pesticides.
In a medium sized saucepan, add the pineapple peels, cloves, cardamom pods, cinnamon stick, minced ginger and water. Bring everything to a boil. Once boiling, lower the heat to medium & let the mixture simmer for 5-7 minutes to infuse the water with the flavors of the spices and pineapple peels.
After the spices have simmered, add the dried hibiscus petals to the pot. Continue simmering for another 3-5 minutes. The hibiscus petals will release their color and tart flavor into the water, turning the tea a beautiful, rich red.
Once the tea has brewed to your desired strength, strain the tea into a cup to remove the spices, pineapple peels, and hibiscus petals.
Taste the tea and, if desired, add a sweetener like honey or sugar to balance the tartness of the hibiscus. Stir well and enjoy the fragrant, spiced tea while it’s hot.
If you prefer your tea cold, let it cool to room temperature, then refrigerate for at least an hour before serving over ice. The spices and pineapple peels will continue to infuse, making this iced tea just as flavorful as the hot version.
