Method
- Start by preparing all the salad ingredients: cube the watermelon and feta cheese, dice the cucumbers and onions then chop the mint leaves.
- In a large bowl, add all the salad ingredients together.
- In a small bowl, whisk the extra virgin olive oil with the lime juice, honey, sea salt and black pepper
- Pour the dressing over the salad ingredients and toss gently to combine.
- Refrigerate for about 30 minutes then serve cold.

This salad is best eaten cold. So after preparation, refrigerate for a minimum 30 minutes before serving.
