Watermelon Feta Salad

Watermelon Feta Salad is a refreshing salad best served when it's hot. It has a sweet and salty taste and so festive for when the sun is out or during a festive period like Christmas.

Ingredients
  

  • 950 g watermelon, cubed (About 5 cups)
  • 2 cucumbers, diced (About 250g)
  • ½ red onion, diced
  • 250 g feta cheese, cubed
  • 2 tbsp chopped mint leaves
Dressing
  • ¼ cup extra virgin olive oil
  • 3 tbsp lime juice
  • 1 tbsp honey
  • ½ tsp sea salt
  • ¼ tsp black pepper

Method
 

  1. Start by preparing all the salad ingredients: cube the watermelon and feta cheese, dice the cucumbers and onions then chop the mint leaves.
  2. In a large bowl, add all the salad ingredients together.
  3. In a small bowl, whisk the extra virgin olive oil with the lime juice, honey, sea salt and black pepper
  4. Pour the dressing over the salad ingredients and toss gently to combine.
  5. Refrigerate for about 30 minutes then serve cold.

Notes

This salad is best eaten cold. So after preparation, refrigerate for a minimum 30 minutes before serving.
