This Pulled Pork/Carnitas Fried Rice is such a flavorful and delicious meal. This is a remix of Chinese cuisine with Mexican cuisine. Pulled pork is Mexican while fried rice is Chinese.
Whenever I have leftover brown rice, my go to next meal is normally revamping it to fried rice. To top it up with some left over pulled pork/carnitas! Boom! I make some pulled pork fried rice. It is so quick and easy to have this meal as long as you have cooked pulled pork & cooked rice. You can actually swap brown rice with white rice though i always swear by brown rice just because it’s more nutritious.

You can also add other ingredients such as carrots or peas to make it your own. Another great alternative to pulled pork is left over fried pork. It would definitely bring another dimension to this fried rice.

Preparation and cooking:
Always start by laying down your ingredients: Chop the chives, dice the onions and measure out the pulled pork, rice, oil and soy sauce.
There is no stir fry without soy sauce!
Heat up a large non stick pan/wok on medium heat. Add in the cooking oil and onions. Mix well and allow to cook for about a minute or until the onions are translucent.
Add in the pulled pork/carnitas. Mix it well and cook for a minute or two.
Add the cooked brown rice and soy sauce then stir well to combine. Allow to cook for another 3- 4 minutes then turn off the heat.
Add in the chives, fluff and serve hot.
Pulled Pork/Carnitas Fried Brown Rice
Ingredients
- 3 tbsp cooking oil*
- 1 large onion**
- 250 g pulled pork/carnitas
- 2 cups cooked brown rice***
- 2 tbsp light soy sauce****
- 1 bunch chives******
Instructions
- Heat up a large non stick pan/wok on medium heat. Add in the cooking oil and onions. Mix well and allow to cook for about a minute or until the onions are translucent.
- Add in the pulled pork/carnitas. Mix it well and cook for a minute or two.
- Add the cooked brown rice and soy sauce then stir well to combine. Allow to cook for another 3- 4 minutes then turn off the heat.
- Add in the chives, fluff and serve hot.
