This simple mango salad is so refreshing and a very good way of having mangoes especially while they are in season. This recipe will serve 4 as a side.

In a large bowl combine the mangoes, onions, cilantro (dania) leaves and bell pepper if using. Season with sea salt & black pepper.
Add the extra virgin olive oil & lemon juice/ apple cider vinegar. Toss to combine and adjust the seasoning if need be. Refrigerate to about 30 minutes before serving.

Ingredients
- 2 large mangoes, ripe, peeled & diced
- 1 red onion, diced
- 1 bunch fresh cilantro (dania) leaves
- ½ red bell pepper, diced (optional)
- Sea salt & black pepper, to taste
- ½ tbsp extra virgin olive oil
- ½ tbsp lemon juice or apple cider vinegar
Instructions
