This almond and coconut granola is simple and easy to make plus it makes your home smell incredible. It’s also oil free and refined sugar free.
The description of easy here means that all you do is just stir together the dry ingredients, drizzle in the wet ingredients, and mix it all together. Bake for 25 minutes, and it’s ready to enjoy. Rolled oats: They are the star of the dish. They are also called old-fashioned or whole oats and they look like flat, irregularly round, slightly textured and circular. Consequently, they cook faster than steel-cut oats, absorb more liquid and hold their shape relatively well during cooking. Additionally they are commonly used in granola, granola bars, cookies, muffins and other baked goods.
Almonds: The key ingredient for this recipe as they make this granola recipe high in protein.
Desiccated coconut or coconut flakes: Once baked, they are toasty, buttery flavor and delicious in this recipe.
Pumpkin seeds are highly nutritious and packed with powerful antioxidants. Eating them can help solve dietary deficiencies. They are rich in vitamins and minerals like manganese and vitamin K, both of which are important in helping wounds heal. They also contain zinc, a mineral that helps the immune system fight bacteria and viruses.
Flax seeds: They are rich in fiber and omega 3 fatty acids.
Honey helps in sweetening the granola. It is also known to be rich in antioxidants among other benefits.
Vanilla extract: This is totally optional but it also enhances the flavours of the granola
Unsalted Butter: It helps make the granola crisp and irresistible. You can sub with oil for a dairy free option.
Salt: For a flavorful bowl of granola, don’t skip the salt! It definitely helps balance the the sweetness.
PREPARATION & BAKING:
Preheat oven to 180°C. Line a large baking tray with parchment/baking paper/silicon mat and set aside.
In a large bowl, mix together the oats, crushed almonds, pumpkin seeds, desiccated coconut or coconut flakes and flaxseeds then set aside.
In a separate bowl, add the melted butter, honey, vanilla extract and sea salt. Whisk everything till well combined.
Add the wet ingredients to the dry ingredients. Mix well and make sure all of the oats are completely coated.
Spread the raw granola evenly on the baking sheet and bake for 20-25 minutes, lightly stirring about halfway through.
Remove from oven and allow granola to cool completely, then store in an airtight container ready to be enjoyed.

Ingredients
